This is a great dish. You can stock up on the ingredients and put them all in the freezer. When you are ready, pull them out, whip up the sauce, and throw it all together.

I love this recipe but it splits the vote in our household. Several of the kids request it and eat it by the plate-full. My husband and other kids would rather eat dirt. This casserole has the taste of childhood as my mother made it frequently. Try it and see what kind of mileage you get!
Preheat the oven to 400 degrees. Lightly spray a 13x9x2 casserole pan.
Cook 2 bags of frozen vegetables in the microwave. Options – broccoli, cauliflower, winter blend (broccoli/cauliflower), or California blend (broccoli/cauliflower/carrots).

*Truth check, I misspelled and auto-corrected broccoli every time I wrote it.
Arrange vegetables in baking dish.

Dice 2 packages of imitation crab meat and place over vegetables.


Whisk 1/4 cup milk, 2 Tablespoons flour, and 1/4 teaspoon salt until smooth.

Add 1 1/4 cups milk and 1 Tablespoon butter. Cook over low heat until bubbly and smooth.

Add 1/2 cup shredded Swiss cheese. Stir to melt.

Pour over seafood and vegetables until covered. Sprinkle with paprika.

Bake for 20-25 minutes.
