Seafood Casserole

This is a great dish. You can stock up on the ingredients and put them all in the freezer. When you are ready, pull them out, whip up the sauce, and throw it all together.

I love this recipe but it splits the vote in our household. Several of the kids request it and eat it by the plate-full. My husband and other kids would rather eat dirt. This casserole has the taste of childhood as my mother made it frequently. Try it and see what kind of mileage you get!

Pumpkin Muffins

Johnny helped me make some pumpkin muffins the other morning. This was at the beginning of the coronavirus lockdown. It was the first day everyone was at home.

I can’t remember where I found this recipe online. I made several changes to the original recipe. Here is the recipe we use now. This makes a huge batch. Probably 40 mini muffins and 12+ Texas size muffins. They freeze well or keep in the refrigerator for a week.
